Is it a possibility to add the availability option of "Out of Office" for the calendar event Condition?

Which availability do you mean? Do you want to turn /onoff certain flow using "out of office" event? If yes, simply use Trigger Calendar Event, pick the date you have out of office period. You have to create the event first in the calendar, maybe : "Start of OoO", and the end will be : "End of OoO". For the start flow, enable/disable the flows you need. For end flow re-enable/disable them back.
