Hello, I want to change the look of the Always on Display with an action. I already found something in the system settings action but nothing worked so far.
So is it possible to change it?

What phone? Set System Setting doesn't always work on all devices, or sometimes it works for certain values, but not for other. You can check my index, at Display section (or find "always on display")

I own a Samsung Galaxy S7 Edge. I found the action to turn it on and off but I did not find any way to change the style of the clock. Is it possible and if it is, what's the name of the action? aod_... ?

I don't have samsung devices to test this. You can change the clock style in the customization menu right? if yes, most likely the preference is stored inside an app, and you need to have root access to modify its database/preference.
But you can try to look scroll thru all possibel value of the system setting and see if any of the value rings some clue. Unfortunately you have to do it by yourself. And be careful, don't try to change something if you don't know what it is. Google the value and confirm it is safe first. I've got bootloop just because modifying some setting using this action. Fortunately I have backup in TWRP, so I was saved.
