Hidden screen elements
Before I press info

I'm trying to get the INFO for the element that is hidden under to top bar under AM that came on when I press Info. Is there a way to find out more information about it without using INFO or a way to stop the top bar showing when I click INFO.

I don't understand your images, but I think you need this action combined with a sleep action:
Show Control UI Infos
The action Show Control UI Infos shows the dialog for recording klicks to simulate user interactions (like action Control UI->Show overlay control->Info)
Examples:
Show the recording UI after a delay in case the red buttons are preventing navigation to the desired target UI

Crude but it works.

The status bar get in the way after you click INFO? Try to use immersive mode and use with/without navigation. This action might pose some risk in some devices. But I never got problem with it in several of my devices. Maybe you should try to add the action,
1. set immersive mode - without navigation,
2. sleep 10 seconds,
3. then set immersive mode - reset to default.
This way, you have the life saver to reset it back in case it won't work out.
